El Chibirique is an amphitheater-shaped vineyard of just 0.40ha at 380-430m above sea level. It has eastern orientation and the soil features a layer of clay over the volcanic rock. The Listán Negro vines here are 60-80 years old and trained in the cordon trenzado system. The fermentation is with whole clusters and native yeast in concrete. It then moves to a 2,500L foudre for the remainder of its élevage.
