100% organically-farmed Xarel-lo Vermell from the Politxonada vineyard. Xarel-lo Vermell is a pink- skinned variety, but in this case it is vinified white. A soft pressing is followed by spontaneous fermentation with native yeasts in used 700-liter Burgundy barrels. The wine remains in these vessels for six months of additional élevage with occasional stirring of the lees. It is then bottled with a small addition of sulfur. 1400 bottles produced.
