‘l’Abellar’ 2020

Penedès (w/o D.O.) - Santa Margarida y els Monjos - Barcelona

100% organically-farmed Subirat Parent from the l'Abellar vineyard. The grapes are collected in three passes. The first pass grapes are gently pressed and fermented in stainless steel. The second pass grapes undergo a brief cold maceration and subsequently ferment in a chestnut barrel. The grapes from the final pass are fermented with skins in clay amphora. The final blend is left to clarify naturally in a stainless steel tank before being bottled with a small addition of sulfur. The resulting wine has an ABV of 10%. 300 bottles produced.
