Garnacha with small complements of Bobal and Royal from very old organically-farmed plots at around 700 meters above sea level. The grapes are foot-trodden in stone lagares, where fermentation begins spontaneously with native yeasts. After 15 days, the wine is pressed off into tank, where it decants over the winter before being racked into used French oak for another six months of élevage. Bottled unfined and unfiltered with a small addition of sulfur. 3000 bottles.
